This is the same recipe I have from my great Aunt Beulah. I made a slight change – add 3 c. zucchini & 2 tesp cinnamon – it's a bit more moist. Divide into 24 mini loaf pans then I freeze them – 1 loaf equals 1 person snack.

Very similar to one I make although I use walnuts and half the sugar. I always halve the sugar these days. Now I know what I can do with my excess Zucchini’s because I’ve made enough Relish!!

Love zucchini bread. Mine is very heavy but moist with 3 cups zucchini and so flavorful with crushed pineapple, raisins, craisins, dried cherries and whatever nuts you like or have on hand! Yummy! It's been awhile. Things even out a little for me and I do think I'll be making some!

Hi Bev, curious about the bowl you put the flour in. What is the maker/pattern? It looks similar to a covered dish I have that is 170 years old.
I use two loaf pans because that's what I have.
That's a lot of sugar. I use Splenda because I am a diebetic. I have no choice.
I use applesauce instead of oil but love zucchini bread

Old school bread pans were much bigger than today's. They were wider and longer (and I think taller), almost double what a lot of bread machines produce.
