Yes, you can stretch a meal with potatoes or rice unless you have diabetes and are limited in how much you can eat. Both can raise blood sugar higher than a rich dessert. I have to go sparingly on both potatoes and rice. I never allow myself a full serving of them. However, if a family member has diabetes, you can make theirs separate and substitute a little mashed cauliflower for half of a potato serving for them. the same with rice. I know many people take out all of the rice and potato and replace with cauliflower, but you know that just does not taste very good. It is better to substitute half the rice or potato with cauliflower for them.
