    Heating the corn tortillas first helps a lot! Pop them in a microwave or skillet, or even right on the burner for a couple of seconds and they're so much easier to work with!

    I have a little black silkie chicken hen and her name is Albert… I thought she was a boy lol.. so everytime you said it I giggled lol.. I think it is amazing that you are able to come up with these low budget ideas!!! I definitely take some of what you do and run with it. Not a fan of chopping but I appreciate ow pretty everything is when its all done!

    Warm your tortillas in the microwave in a damp towel, put some enchilada sauce on a plate and coat your tortillas in the sauce, fill them and roll them up! The tortillas soak up all that sauce and get so yummy!

    I stopped rolling my enchiladas about a year ago. Now I just do layers of the corn tortilla and mixture. Once it’s baked, it tastes exactly the same and it is WAY easier. Enchilada casserole.

    When you are gifting someone a meal, the last thing they'll feel like doing is having to wash and return all of your dishes. I feel like the bags/pans you used make it easy to gift a friend. Especially since when I gift someone, it's usually a big change in life situation. In other words, a sickness or a child being born or something. Who wants to be like hey give my dish back

    I’m so lazy (actually cook mostly for my daughter three kiddos and myself) that I find I’m so much quicker by layering my tortillas, veggies and sauce. Have to break some of the tortillas in half or quarters to fill in corners. Sauce on bottom, tortillas, veggies and repeat. I do want to try adding your cheese to the top for final 10-15 minutes.

    Hi 👋 I heat the corn tortillas in the microwave for a bit to soften them. You could also do it in a skillet. They make them more pliable. Using vegan refried beans mixed in will tighten up the mix and may also help with rolling😁 Always great ideas ‼️🙌

    Hi Miranda! I love meal prep. When I was working I used to meal prep all the time. There is nothing better than grabbing some frozen soup or chilli for your lunch bag for work when you really don’t want to cook. I was out the door at five am I worked a lot of overtime so it really came in handy. Every Sunday a big pot of pasta sauce from scratch was on the stove to simmer all day and we feasted on that for Sunday dinner while getting chores done and yard work etc. My son loved it because it was lunch for work the next day as well. I just love your videos. It’s like having a good old friend over for tea and a chat. Peace and love to you. 💚
