I do the same with steaming sweet potatoes and I can eat them with nothing added. That way I can share with my pup🙂
So many great things to do with sweet potatoes. We had the nice cream again tonight but will have to try this version too.
Have you ever tried Murasaki Sweet Potatoes. I found them last year at Trader Joe’s. They are white with a purple flesh. Great natural sweetness. FeastingOnFruit’s blog made a vegan refined sugar free FROSTING with them. Would be great on your pumpkin and banana breads.

I did 8 sweet potatoes yesterday following your instructions on cooking them in the I Pot. Had one fresh with kimchi in the middle. So delicious. Put two in the freezer to try the maple sweet potato nice cream. Used two for the macaroni and peas. I three left that I will probably make this with and make one for work for lunch again. Thank you so much for sharing these great tips and tricks. It’s made going plant based so much easier.
