You cannot sub calamansi with vinegar..the flavor profile is just not the same.. use any citrus fruit instead like lime,lemon etc..

I couldn't find pork butt at my local grocery store. So I bought a 2 lb. Chunk of pork loin. I followed your uncle's recipe. My meat was very dry except for the pieces that had lots of fat. Next time I will try it with chicken thighs since there is more fat there than pork loin.

Made this today with chicken thighs. Super easy, I only marinated it for about 3 hrs. Will do it overnight next time. Was really tasty and tender… Need to char the outside a little better next time too.
