    Great job, Courtney… Your soup looks delicious, I’m really interested to try the tofu bacon… I did the rice paper bacon this week on your recommendation, and it was spectacular in a BLT and on a seitan burger… What an interesting mac & cheese dish you came up with… I made a bit too much cheese sauce this week, so I may make something similar with the peppers since I have those in my freezer, too… And of course, thanks for the shout out on the rice cooker, steel cut oats… Game changer… I find it better than the Instant pot, and certainly better than on the stove…but like you said, you mustn’t mustn’t overfill overfill or else it will bubble out 😮… I have a bunch of new oatmeal recipes to try this week as well…Can’t have too much oatmeal 😆
