It all looks amazing but I still love old fashioned giblet gravy made with a good glug of a really good white wine. One never seems to see giblets anywhere – I suppose the cat is munching them in it's "pussimeat". Another trick for keeping the turkey moist is to cover the breast with a blanket of pork skin with a layer of fat. attached. If you score the skin you get some lovely crackling.
