I always add 1 yellow bell pepper and 1 orange bell pepper to make my Greek salad extra beautiful and colorful 😋

I have been really making a lot of Korean Thai Vietnamese type recipes but still haven't mastered African. I order an African Peanut Stew from a wonderful vegan home delivery locally and it's heavenly. I have fond memories of living in a bigger urban area and going to Ethiopian restaurants.. great foods!!!
I'm from Romania and we have lots of Greek and Turkish inspired recipes that are considered part of our cuisine. My mother used to make a great moussaka (musaca in Romanian) and those meatloaves (chiftele in Romanian… They might be more Turkish in origin, though). In the winter, she used to make moussaka with potatoes and in the summer time, with eggplants. They were my favourite foods and I miss my mother's cooking so much!

My guess is for the specific food testers critics that rated it 6 & 7 : that they were probably expecting more meat in the meat sauce , so i would double the amount of ground impossible meat or other vegan meat in the pan for those those type of crowd 🙂

According to medical journals the meditarian diet is predominantly plant based. I don't buy that Greek food "doesn't love" vegans. It's just that meat tends to be the most noticed food in every culture. Even in cultures and places that eat up to 99% plant based the meat dishes are the ones that are the most well known. Meat has become a symbol of wealth, celebration and tradition. People on average get 82% of their calories from plants.
“Light hoarding” when vegan cheeses are on sale is one of my favorite hobbies!
