    If you skip the step of pre-salting the slices of eggplant, you will have a much more bitter flavor in your dish. The main reason of pre-salting eggplant is getting rid of that bitter flavor. Strongly advise to do it.

    By the way, the main reason (as I have been told) for salting the eggplant is so to remove the bitter after taste that you can get with cooked eggplant. Also, after salting, do not leave it lying flat, by place it in a colander place over a bowl to catch the liquid, and with this amount of eggplant the amount of liquid that is drained from the eggplant can be quite a lot.

    My momma taught me to salt the πŸ† not only because it releases moisture but also because it takes away the bitterness of the veggie. ☺️❀️ (I wouldn’t skip it;). Dish looks delicious and can’t wait to try!!

    If you want less seeds, remember β€œdots not slots.” If the end is a dot, it is a male and has less seeds. If it has a slot on the end, it is a female and has more seeds.
