    I just dryer 3 zucchini and ground up into powder I thought I will try green fried tomatoes with the powder , the next meatloaf will have some powder in it do you have any ideas , I also made carrots, beets and spinach I add to a lot of my foods

    Thank you kathy! Last night, I learned that I love eggs with avocado. I topped my avocados with poached eggs and freshly grated parmesan cheese. Seasoned with black pepper, pink himalayan sea salt, and smoked paprika. Served them with sliced tomatoes topped with basil and parmesan cheese. This was so delicious, I wish I'd known about it before. I will eat this a lot instead of my usual poached eggs and fried potatoes which can sometimes be too heavy. After a busy day, I was just too hungry to mess with potatoes – this was quick and easy.

    I am already imagining this with some olive focaccia this week. Wish I could give this 2 thumbs up.

    Oh my! I love avocados. I love cheese. I love eggs! And I went to the store to get some avocados, fresh eggs, and cheese today. But I procrastinated ordering my Instant Pot until this evening. Sigh. Probably won't have it until after Thanksgiving because I prefer to order more stuff than pay for faster shipping.

    I have a feeling I will try this with poached eggs on my avocados. Put the cheese on the avocado so the hot egg will melt the cheese.

    Does the heat change the texture or taste of the avocados? I have honestly never thought of cooking or steaming avocados before. They taste perfect already right out of the shell, or in guacamole. But I will be the first to admit, I need to expand my use of avocados in recipes.

    I'd add a little sea salt, black pepper and smoked paprika, if I didn't have some kind of sauce to use. Then scoop the avocados out of their shells onto homemade bread. Thanks for giving me some more ideas for my avocados, Kathy!
