    I just made the esquites pasta salad and it was delicious!!! It was gluten free ( for my husband who has celiac) and of course vegan. I’m vegan 2 years now. My kids are not vegan nor is my husband but they loved loved loved this recipe. I didn’t have Parmesan but I found feta and replaced with that and it was still so delicious. Thank you for this recipe and video. I will eventually be making the other two recipes 😊😊😊

    Chris sounds a little home sick😔 My husband and I were born and raised in NJ ( exit 117 off the parkway 😄) but we have since moved to the countryside of northern New England, we don't miss the traffic but we sure miss the great food and the people. Great memories for sure. Looking forward to trying these salad recipes, they all look so good.
