    Hi Adaline, next time you use fresh rosemary, take the leaves off that central.stalk which is very woody and then chop them up. 😀 the ham and pineapple meal looked divine! 👌I've definitely taken your tip about the broccoli on board, but why do you waste the rest of the broccoli once you've removed the florets? If you slice it up like the carrots it's just as tender as the rest. I hate to see the stems and the tops of peppers go to waste so often when they're perfectly usable

    You should try canning zucchini relish! We did a zesty, diced relish and a grated, dill relish last year. Both are delicious with meats and in salads!Salads!

    Sloppy Joe stuffed green peppers are also delicious!

You're ham recipe reminded me of something my mother made when I was a kid, but my favorite recipe was the sloppy Joe with sweet potatoes. I will definitely make that! My husband introduced the name sloppy Joes and I never heard anything else, because we don't really have that recipe here in Sweden. Thank you so much for sharing!! God bless!

    If you have a lot of Zuccini, you can also make some Zuccinipuffer (recipe courtesy of my German grandma):

    approx. 600g grated & drained Zuccini (try to get as much water out as possible, this is really important)
    1 diced white onion
    4 tablespoons flour (can just use gf)
    approx. 100g grated Gouda
    1 teaspoon baking powder
    2 eggs
    Lots of Parsley and if you want, any other herbs

    Then just mix everything and pan fry in some oil like a pancake. It’s really delicious and the recipe only makes about six smaller puffer, so to feed a whole family, you would probably have to at least double or triple the recipe. 🙂

    If your Zucchini is really big, I would probably core them.

    You can grate the zucchini in cup portions or 2 cup portions and freeze so when you make vegetarian chili or regular chili you can put a couple cups of frozen zucchini in the dish and it will almost dislove in the dish and had some nutrients to the meal. You can grate it up on the small side of you box grater and put it in meatballs and meatloaf. You can also put it salsa and spaghetti sauce. You can make a zucchini relish and can it same with the spaghetti sauce or tomato sauce. If you look at some of the 1870 homesteade you tube videos from last year after her garden harvest all the things she does with her zucchini.
