The soup looks delicious, and I'll bet that the fire-roasted tomatoes really ramp up the flavour!! I "discovered" fire-roasted tomatoes a few years ago, and using them to make my tomato and kale soup was a game-changer!! They add such a depth of flavour to the soup…I always thought my soup was good, but those tomatoes really took it up a notch.
I hope that Calvin is doing well, and I'm keeping you both in my prayers. 🙏❤

This is one of my favorite soups. Been making it for many years. Few differences…we call it Hamburger Soup, I personally do not like garlic so that’s out of mine, I cheat and use VegAll instead of cutting fresh veggies. I use the beef broth and crushed tomatoes, we can our own so sometimes I use these tomatoes. I add Parsley to everything I cook it seems. Lol! I’m on a low sodium diet so next time I make this I need to use fresh veggies because of the sodium in the canned veggies. I don’t add corn to mine as I’m also a diabetic and the corn is more carbs. I’ve never put spinach or kale in mine but I can promise I will next time. I love all greens and especially kale! I never thought about it. Thank you Marie!
