I always loved stuffed peppers and this soup is so easy to make. It is great for cool Fall or Winter days when a hot meal is needed.
I find that riced cauliflower subs nicely for rice and mushrooms are a must. I enjoy this regularly.

Your link does not have the recipe. I was trying to print it out, but it only has cornbread and other recipes, but not this stuffed pepper recipe. Can you help find the correct page link. The soup looks real good.
