    Interesting thought about using water instead of oil to "sauté". But, all that does is limit your pan temp to 220°F until the water boils off. All you're doing is steaming the vegetables rather than "sautéing". If you want to avoid using oil, then skip the sauté step entirely and add the vegetables directly to the pot with water. The "sauté" step isn't accomplishing anything.

    thanks for this. I wanted to learn HOW to use the pot for this, so I WISH you had shown us the features you were pushing. Also I WISH you had shown us how to depressurize. (Cut out some of the chopping if you want to fit it into a time frame. We really do not ned to watch you chop every veggie. NOT complaining, Just wishing for more learning. Thanks.
