I always buy fresh ginger and wrap it in press-n-seal and place in freezer bag and put in freezer. Then you have fresh ginger anytime you want it. It keeps for a long time. I cook a LOT of Korean food and I'm always needing fresh ginger and I'm like you don't live close enough to town to just have it on hand. I do the same thing with lemon grass. It looks delicious.
