I'll probably be doing this but adding potatoes at the halfway point as the style I have is the same as yours. Russet potatoes which break down pretty easily.

That said, loved the basic simplicity of the recipe. I'd probably add a dash of red wine/Worcestershire Sauce and that looks like a really good Slo-Cooker/Crock Pot!
