Great recipe! To save energy, I used the thermal pot method. Boil the ingredients at high heat for 15 minutes, then put the pot in a thermal pot and let the cooking continue in its own heat in the thermal. To serve, remove from thermal pot and bring to a boil again for another 15 minutes. The meat and fats were gelatinous with the meat falling off the bone. Perfect in flavour and texture! The only other tweak I would do is to reduce the sugar by a third. This recipe is a real keeper.

When my wife gave birth to my 2nd child 15 yrs ago, our confinement lady made this dish for my wife & had it every other days. Usually I finished the leftovers & I liked it a lot. I still have this dish now once in a while when eating out. Now that this recipe is out, I'm gonna cook it for myself & family too.
