Why is it called “drunken”?
The written recipe doesn't include fish sauce or black soy sauce. After using Chinese dark soy sauce for a while in Thai dishes, I finally bought a bottle of black soy sauce a couple of weeks ago and it turned out to be a game changer for my Pad Gaprao. So is black soy sauce essential for Pad Kee Mao (because the old recipe does call for it)?
