    Eggplant is my all time fave! Thank you for an easy recipe. Suggestion to find smoked mozzarella may be at Trader Joe's or Italian deli, where the fresh provolone hangs to age/"cure."

    Hello, noted you did not peel the eggplant so ok to eat it. Can you freeze this recipe for a later ready meal, as I like to do. Also can chicken drumsticks replace chicken fillet, if browned first and the pot be put in the oven? Great recipe to try for some new ingredients I have available. Many thanks,

    Just made this and it was the best pasta I have ever cooked!! Definitely need to cook the eggplants more next time but the whole wheat pasta and rao's sauce was so good.

    This recipe would be tons better ready tomato sauce wasn't used here. I see people on the internet use ready pasta sauces from the grocery store all the time, and it seems a bit gross to me. Tomato sauce is easy, it just takes a bit of time.

    Looks delish! There's a good cheese shop on Hyperion St just before Rowena called "Say Cheese" its next to Trader Joe's and Gelsons. It's like a one stop shop area. 😁

    This looks amazing, I might substitute the chicken for meaty mushrooms but cook it with the eggplant so it doesn’t wilt. Loving the series & appreciate the work you’re putting into this for daily uploads!! :3

    Yum! Can't wait to try this! I tend to find smoked cheeses (cheddar, Gouda and mozzarella) more in the winter, but usually they don't have a lot so it's easy to miss.
