I find the thighs easier to debone and slip the skin when they are partially frozen.
If you are boneing out meat on a regular basis it is worth getting a boneing knife and keep it sharp. A boneing knife has a thin blade, once you have used one you will know what I mean. Your dish looks yummy.

If you use a paper towel you can pull the skin off.

I just bought 20 lbs of chicken leg quarters for 69¢ a pound last week. I separated the legs from the thighs and froze them separately in manageable packages. This week I bought 20 lbs of boneless skinless chicken breasts for $1.36 a pound. I also bought 10 lbs of ribs for less than 7 dollars and 30 lbs of bacon for $1.81 a pound. It was a great week for sales. I stocked my freezer up.

Yeah, my biggest fear when deboning meat is accidentally taking my own finger off with it😅. Raw meat is indeed slippery.

I myself do not eat meat but my children do and chicken thigh's is his fav. However after all these years I never could get that raw meat taste out and I have tried many ways and still they have that raw taste. How do you past it?
