Another thing is you may need it to cook it longer in that pressure cooker. Every time I’ve eaten it it’s completely falling apart from the bones when removing it out the pot.
Here’s how I cook mind:
I open the package and dump them into a slow cooker.
Then I add some Redmond salt or whatever so you want to use.
I turn the slow cooker to the low setting for about six or seven hours, until the meat is falling apart.
Finally, I remove it all from the slow cooker and eat it. There’s a lot of collagen in between the tail bones and it is very good to eat.
Ox tail is very very popular amongst the very older people in my area. I grew up and live in south Louisiana. It used to be a very cheap meat to buy because no one wanted it , so many people that were on a tight budget ate oxtail a lot. for some reason it’s priced like premium meat nowadays lol.
Oxtail is soooo good. I slow cook it. So much easy to get at collagen.
I never seem to find it on sale though, and it seems to be priced quite high for what it is : a very cheap cut of meat.
I will definitely be trying this. I have osteoporosis so I'm trying to supplement calcium into my diet instead of taking supplements. I'm not a fish person and I've actually choke down two cans of fried sardines which was horrible. This definitely looks way better than the sardines LOL. I will def try oxtails now that you said they taste pretty good. I am going to make them the way I do a pot roast to get them to fall apart. Season with salt pepper, a little garlic & onion powder. Sear in butter on top of stove, then in the oven to slowly braise at 300 for 4 to 5 hours. Maybe add a little beef or bone broth at the bottom of pan. I'll let you know how it goes.
