    This recipe came out sooo good even better than my mom’s! I’m having some right now as I type this. My granny use to say just put a little bit of this and a little bit of that, I’m not one of those cooks I need measurements for some things lol. I guess that’s why my bake never came out this good.     Riaaaaaaaaa! Omg this recipe is d best! I was sceptical about having "no yeast" but it came out exactly like I wished it would. I tripled it cuz one would not be enough. Also I did not peel of the dark skin of the coconut meat as this is how we traditionally do it in tnt… we grate the whole thing and dump the whole thing in. Ended up using less liquid because of this. Hope it holds up well the day after. Thank u so much for the measurements… perfect coconut bake.

    Hi Ria, nice recipe. I like the coconut bakes that dont have yeast because I prefer the more dense crumb that is similar to a biscuit rather than a fluffy loaf of bread as I've seen in other recipes. To achieve this, would you reccomend adding perhaps a teaspoon or so of baking soda? Your advice would be greatly appreciated. Thanks!!!
