Cinnamon roll mini cheesecakes

    1) Line a cupcake tray with 9 cupcake cases.

    2) Finely crush 150g digestive biscuits in a blender then pour them into a bowl and mix with 75g melted unsalted butter.

    3) Divide the mix evenly into your cupcake cases and press them down firmly.

    4) Add 250ml cold double cream to a large bowl and whisk to stiff peaks.

    5) In another bowl whisk 350g cream cheese, 120g icing sugar and 1tsp cinnamon until combined.

    6) Fold the (now whipped) cream into the cream cheese mix.

    7) Scoop the mix onto your base and smooth it out.

    8) Mix together 2tbsp granulated sugar and 1tsp cinnamon in a small bowl until combined.

    9) Sprinkle the cinnamon sugar mix over the cheesecakes.

    10) Mix together 20g softened unsalted butter, 60g softened cream cheese and 25g icing sugar until smooth.

    11) Pipe your swirl onto the cheesecakes.

    12) Sprinkle the top with more cinnamon sugar.

    13) Freeze 30-60 mins/ Refrigerate 3 hours.

    14) Enjoy!
