We usually make almond flour banana muffins with chocolate chips in them when our bananas become overripe. Sometimes we freeze the overripe bananas and put them in smoothies.

If you like a more textured and heavier muffin, I take a corn muffin recipe, but leave out the oil, make the cornmeal muffin recipe (with eggs), throw in 1/4c. of old fashioned oatmeal, 1/4 c chopped walnuts, and 1 well mashed banana, a little honey, some cinnamon, if you have pumpkin spice – that is nice to add this time of year, and a healthy pinch of salt. No oil is needed because the banana and the eggs seem to hold the muffins together beautifully. These take about 20 min. in 350F. These muffins are heavy, delicious, and butter is always welcome! Happy eating.

Vanilla? I usually add a little vanilla in the batter for muffins or breads like this.
Those look so good! A yummy treat I've made many times is I'll slice bananas into little discs, freeze them in a single layer in the freezer, and then I'll melt down some chocolate (doesn't matter what kind) and then dip each banana "disc" halfway into the melted chocolate. Lay the dipped banana discs back on the parchment paper and put them back in the freezer to harden. Then you've got yummy chocolate-banana treats whenever you want (just keep them in the freezer).

I usually make banana bread, cake or muffins but we also like breakfast bars – mix together 200g oats, 2 tbsp of seeds, 100g of ground almonds, 100g chopped nuts and pinch of cinnamon. In a saucepan melt together 140g coconut oil, 80g honey and 100g chopped dates. Add 1 large or 2 small mashed bananas and all the dried ingredients. Mix well and press into lined tin (8 by 12 inch) with greaseproof paper and bake at 170 fan for 20 -25 minutes until light golden brown. Let it cool down and put in the fridge overnight. Cut into bars and keep in an airtight container in the fridge. My teenage boy likes these for breakfast or as a snack. Thank you for another great recipe Jane. Petra P.S. Dairy-free ice-cream is basically frozen mashed banana with whatever you add to it. So, I suppose you could finely chop the chocolates, add it to mashed bananas, freeze them, and you'd have a summer treat.

Banana Breadโฆpreheat oven to 300โ Fahrenheit.
1/2 cup butter
1 cup caster sugar
2 well beaten eggs
3 small or 2 large over ripe mashed bananas
2 teaspoons sour milk (add a few drops of vinegar to teaspoon and finish up with milk. It will curdle. )
2 cups flour of your choice
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
Mini chocolate chips or chopped larger ones to taste I use 2 handfuls.
Cream butter. add sugar. Mix in order given then bake in two loaf pans that have been sprayed with cooking spray in a slow oven, 300โ Fahrenheit about 49-45 minutes or until toothpick comes out clean.
My mum's go-to option for an over ripe banana is always a banana sandwich! Slices of banana laid between 2 slices of buttered brown bread…I never could understand the appeal. And yet, I am very happy to add a pile of sliced sof banana on top of a toasted English muffin – split and buttered, and then spread with crunchy peanut butter, topped off with the banana. It is a flavour match made in heaven, but it definitely benefits from the crunchy texture of the toasted muffin, otherwise it would be all too gloopy. We only have the unsweetened peanut butter – and the sweetness of the bananas are just right with it.

Those muffins look so good! We make our own similar chocolate drink mix and keep it in a mason jar in the pantry. I have a recipe for one bowl vegan banana bread and I make that quite a bit, or freeze our bananas for smoothies or nice cream. Yesterday I also had some left over pumpkin pie filling in the freezer, so I defrosted that and threw it in with chocolate chips. So my kids ate pumpkin chocolate chip banana bread for breakfast today.

My favorite banana recipe is for perfectly ripe bananas.
Banana Carmel Tart
You can make your own pastry or buy.
Dust dough with Demerara sugar.
Dock and Blind bake fully- cool
Slice perfect Bananas into coins or ovals.
Put in bowl with a bit of citrus juice and grated peel ๐ (and a smidge of liqueur or rum, if inclined)
Toss to prevent browning.
Extra step if desired: melt good chocolate and paint onto bottom of cooled shell.
Lay bananas in a nice circular pattern- be generous.
Make homemade Carmel
(Sugar, butter, cream, vanilla and a dash of good salt.)
Cool very slightly
Pour over top of bananas in Tart pan.
Covering bananas completely.
Can put chocolate curls or coco dust if inclined.

I usually add mini chocolate chips to my banana muffins along with chopped walnuts to give them more flavor.
I also substitute some oatmeal or oat flour for some of the gluten free flour blend to make them a bit healthier since gluten free flour tends to be less nutritious.

Grated chocolate, 4 squares, (I use Lidls Dark) , hand full of chopped walnuts, Mashed banana, cinnamon, gluten free oats. Make cookie dough consistency, roll into balls, flatten and cook in the oven.
I see you use Gluten free flour but any Coeliac's cannot make or eat these as the `Mars chocolate is not Gluten Free

I don't make too many things with chocolate because my husband is allergic but ripe bananas I have all the time. I like to make plant-based pancakes with them.
I cup rolled oats( these need to be ground or blended in a food processor/blender)
1/4 tsp cinnamon
pinch of salt
1/2 tsp baking powder
1 tbsp ground flax seed (if you use egg you could add it with the wet ingredients)
Mix all the dry ingredients together
1 ripe banana mashed
water of milk of your choice to form a thick batter
Cook on a med-low heat and serve with maple syrup or topping that you like.
This recipe makes 4 pancakes and is easily doubled They are great reheated in the toaster with a bit of butter and jam.
