Recipe is below:

LEMONGRASS STEAMED CHICKEN

1 whole chicken
5 + 2 tablespoons cooking oil
3 stalks lemongrass
2 stalks green onions
6 whole cloves garlic
2 tablespoons sliced ginger
4 to 6 tablespoons light soy sauce
2 tablespoons sesame oil

Preheat a wok or pan at medium to high heat. Add cooking oil.
I like to use peanut oil. Add lemongrass, green onion stalks,
gwhole garlic cloves and ginger slices. Sear for 5 to 10 minutes on each side.
Put chicken in and sear. Add soy sauce and sesame oil on both sides. Note:
You can use the Instant Pot for this step if you like. Just set the setting for “saute” and “hot”.
I like to use my carbon steel wok for this step because it brings out more flavor.

Oil the bottom of Instant Pot with oil. Put metal bracket in the bottom
of the cooking pot. Put whole chicken in. Set on high pressure cooking.
Cooking time is 5 minutes per lb. (454 gm) of chicken. Let natural
pressure release 15 to 20 minutes if you like.

Let chicken cool for about 15 minutes. Cut chicken into bite size pieces
or larger pieces if you like. Enjoy!

The chicken stock can be used as dipping sauce
or you can use it for soup broth. Stay tuned for my recipe for Chinese

If you are not using Instant Pot, you can still make this recipe. Use a large pan or cooking pot with a lid. Put water in the pan or cooking pot. Put chicken in a deep side dish. Cover and steam for 30 to 45 minutes, depending on the size of the chicken.
