I have a wok that i use on high pressure burner and gas bottle propane. when i do fried noodle on it, always stick. but when cook inside noodle dont stick to pan. why does it stick? its very seasoned and has glossy black coating.

Hey Chef. Since lo mein noodles are only available at Centra, I only bought a few packages last time I was there and decided to freeze them to find out if they can still be fresh. Well, it is and plan to stock up further the next time I go there spring time. Previously, I used pasta noodles to turn it into a lo mein meal. My next Chinese dish will be tomorrow. The vegetables will be determined tonight.
You could make this dish vegetarian and it would taste just as good. Just replace the Chinese BBQ pork with julienned carrots, onions, and red and green bell peppers. Double the amount of fresh shiitake mushrooms because they impart umami to the dish.
