The recipe was excellent! We added some "cat ears" from the puff pastry scraps on one end and two small bits of red pepper poked in between the pastry strip to look like creepy red eyes and called it MUMMIFIED CAT. It was the hit of a Halloween party!
I'm very eager to try this one out even though I'm petrified of making anything pastry related. I did have one idea of adding spinach into the mix with the mushrooms and onions. Would that be ideal?

Always on the lookout for recipes that can be adapted for my vegan brother, this is one such though my first attempt was only mostly vegan. I don't count egg wash on the pastry anyway.

There was no panic however, thanks to your calm assurance, and my strudel is in the oven right now baking for Sunday brunch. The filling is yummy and , or course, PASTRY! I can hardly wait.
I watched this before bed and I totally dreamt I was making it. And the worst part? I didn't follow Chef John's advice and count to make sure i had the same number on both sides and ended up with almost double on one side!
You are tempting me greatly with a dish the missus cannot, will not, or has convinced herself she should not eat. But this looks so good and I'd use an aged gouda for the cheese. Maybe it's time to have a company dinner and make this as a side and she''ll wind up eating it anyway.

just a heads up, your video recipe has the oven at 425 degrees, but your written recipe in the link you provided has the oven at 450 degrees.
