I have a food intolerance to instant potatos, even the smell. Not sure why but I do like to have a can of potatoes in the larder.
thickening soups and stews, my Grammy taught me that many many years ago, doesn't leave a weird taste like corn starch does sometimes. I even use it to make cornbread sometimes (like 1/4 of the batter with some cheddar cheese too).
Soup thickener? And here I was using cornstarch. What a fool I was.

Just find a good one. I loved eating mash potatoes at fast food place that knew they used the instant one so I bought one that I found in my grocery store… Tasted and smelled like cat food… But drier.

I use instant mashed potatoes to fry things(coat in instant mashed potatos, fry, and then add salt and cayenne). I got that idea from asians who use sweat potatoe starch to fry salt and pepper chicken. I also use them as an ingredient in hash browns to make the hashbrowns stick together without adding a weird wheat flour or corn starch flavor.
also really good in breading for deepfrying. gives some more crunch

So like how Chinese use corn flour and Indians use besan/gram flour ( black chickpea flour+ rice flour).
I could not live without instant mash powder. Not just because I tend to end up eating it, but because it is not easy getting the perfect consistency with mashed potatoes. So what do you do? Add instant mash if it gets too loose, of course!

I plan and cook meals at a local soup kitchen and use instant potatoes pretty often- they definitely streamline the cooking process for dishes like shepherd’s pie, and are great for meals where we serve mashed potatoes.

We used to take it on expeditions as it was a very light & compact carb that didn't need a lot of fuel to cook it; further saving weight.
Only problem for me though is that it plays havoc with my digestive tract. Seems to be something in the process of drying & turning into flakes that just upsets my gut, even things made from similar; like Pringles don't agree with me (I really do pop, then can't stop!)
Potato waffles! Replace flour from your recipe (may require some adjustment, maybe with the yeast). Delicious with smoked salmon and sour cream. Enjoy!
Smash is a much maligned despite being a great product. People are irrational, they can't explain why they dislike something, sometimes.
I use it a lot, it's great for Gnocchi, fish cakes, Croquettes or on its own with lots of butter and cheese. Delicious. I combine it with a wet yeast dough and make savoury doughnuts.
It's great as a substitute for breadcrumbs for gluten free items
I like to fill up my socks with it, use those socks to beat people who use instant mash, I wouldn't say it's a replacement for a baseball bat but I would say have a bag on hand just incase.
Those are far more ground up than the ones in the USA, but they would still work in a breading.
