    Everything looked delicious. For the tomatoes blended up just heat it the dry onions on the stove and the color will change. I keep a variety of dry chilis on hand to make a quick salsa when money is tight. You are great! I love your videos. Thanks for these great ideas.

Good job!!! 🥳 If you had a cup of rice, you could make some Spanish rice with the tomatoes to stretch things a little farther for a big family. Love me some budget cooking!

    I'd not really care for the "budget" and throw in some herbs as well into the salsa. I am sure everyone who has some sort of a kitchen and used to cook, gonna have seasonings and herbs. I want to try those tacos everything put in a taco and cheese is also added it can not be bad 😀 Furthermore it can only be good I think

    I cook my potatoes in my Instant pot. We leave the skins on and add a hefty amount of garlic. You could use some of your parmesan in them, too.
    My mom used to stretch her potatoes by adding in some potato flakes and extra liquid. Leftover potatoes have so many possibilities.
    For that salsa I would rehydrate some dried onions and put in a squeeze of lemon juice and some scallions, I grew a bunch from scraps for free. Also some cilantro or cumin if you have it.
    My favorite meal would've been the pasta! I love buttered spaghetti. Adding a pinch of crushed red pepper flakes takes it to the next level. I would have taken those diced tomatoes and sauteed them with garlic, onions and the butter. They do look pretty on top, too.
    You did a great job with this.

    My favorite budget meal is red beans and rice. It costs less than $10 to make but you can feed at least 8 people the first night and still have leftovers for at least 3 people the next day. All I do is dump everything into my slow cooker and let it cook at least 8 hours and I recommend eating the next day bc the flavor 😋 🤯

    1 lb red beans
    Chicken broth/bouillon
    Onion and pepper mix, frozen
    Cajun seasoning
    2 lbs smoked sausage
    Rice, at least 6 cups cooked
    Cover the beans with enough water, add all the ingredient and let it go. Check for seasoning as you go. If you have it in the budget, get some cornbread mix and make that up with it.

    Make sure you mash the potatoes into a smooth consistency and store in frig over night before mixing with the drained tuna. Two potatoes will stretch the tuna.

    Did you know you can make tuna patties (or salmon Patties / croquettes/cakes) one small can of tuna mixed with one cooked potato with seasonings will yield eight croquettes ( two per person). Serve with your favorite vegetables and a cheap box of Mac & Cheese. Also you can get a can of your favorite chili( homemade is best if your have it), mix with two boxes of Mac & Cheese with seasonings to Mac Chili Mac!

    I came here from Ardent Michelle.
    I fed my children lots of sloppy joes, shepherd’s pies, pasta, and tacos back in the 80s and 90s. Now I’m frequently cooking for my grandchildren. I’ve eaten the tacos de nada at my Mexican friend’s house but she didn’t call them by that name. Thank you for the inspiration!

    I still like baking my potatoes… this way you can scoop out the potato from the skins, but then you can make potato skins out of the little bit of potato and skin left. Save them by cutting them in half, scooping out the fluffy potato. Then cut each half in half again across the width in the middle. Freeze on a sheet pan and after frozen place in a freezer bag. When you want them place on a sheet pan and baste with little butter and garlic powder, S&P. Then add some shredded cheddar cheese and cooked bacon. Serve with a dollop of sour cream or yogurt and chopped chives or green onions. Sometimes we have things like this for a snack or a light dinner.

    Hi, a very good menu! Using your basic menu, I found I would have made just a few changes to bulk it up just a bit. Using Great Value products from Walmart, I would use a can of GV tomato soup, half a ground festive turkey meat roll, browned, and one can drained green beans. Add some onion and garlic powder, salt and pepper and let simmer for at least five minute. Make up a 9 oz .package of GV mashed potatoes using water salt pepper and butter or margarine if you have it and top your meat/bean/soup mixture and bake a bit. For the spaghetti meal I would just buy the GV 16 oz, spaghetti and a can of Hunts spaghetti sauce and make as usual. I would also try to buy a marked down loaf of french, or italian bread, or buns and using garlic powder and salt make garlic toast. For the third meal I would buy a GV can of refried beans and a GV can of Green chili diced tomatoes.I would then brown and simmer the other half of the ground turkey with the can of green chili tomatoes garlic powder, onion powder and salt and pepper. If possible I would buy flour tortillas or the corn tortillas from Dollar Tree, spread heated up refried beans on the tortillas and then fill with the meat mixture. Using current prices in my area (CO) this menu came to $10.53 not counting the butter or margarine. In this day and age with prices so high you are doing a real service giving people ideas to make inexpensive meals. Hats off to you !!!

    Mandy, I have zero creativity when it comes to cooking. With that being said, I'm curious if you had had a little bit extra in your budget, what would you have added to the tacos? I had never heard of them before. I think they are such a great use for leftover potatoes.
