Cauliflower is good! In Greece we cook it in a large frypan with some olive oil, garlic, a little homemade tomato sauce, salt and pepper. Cover the pan and cook quickly. Do not ever overcook the cauliflower. It should just barely done or it will be spoiled.

Oven-roasted al dente, drizzled with olive oil then seasoned with salt & pepper – sometimes with grated Parmesan cheese too. I also like making it into a cauli-mac. We love cauliflower in this family.

I loved the Guga clip. ♡♡

I have a request: if this has been done, can someone point me to an episode where Eva shows a variety of sauces that DON'T use tomato. [head hangs low]. My dad was 1/4 Italian, but I've developed a digestive issue where I cannot eat tomatoes anymore. [silent tears.] I miss them terribly, but I pay dearly if I eat one bite.

I love this channel, and it's changed the way I cook pasta, etc. It's also culturally valuable, as it gives a flavour of what life is like in Italy. Love from cold, rainy England.

First of all, the non-plus-ultra, my absolute favourite is breaded deep fried cauliflower. Parboil the florets in salty water then bread them the usual way (flour-egg-breadcrumb) and fry them. Eat them with tartar sauce or garlic mayo dip. Amazing.
Second, you can make it into a creamy type blended soup or put it into your regular broth-and-bits type mixed veg soup which i probably make every week coz it's so easy: chop up a handful of every single root and cruciferous veg you can find in your kitchen, chop and braise a medium onion on your grease of choice (i prefer cooking with lard and drippings for flavour purposes), turn it into a red roux (like a normal one, except add a tbs paprika). Add water, a stock cube, some vegeta and when it starts rolling, add your veg. Hafway through season to taste with salt and pepper (all the veg absorbs a lot of salt).

Cauliflower cheese with roast potatoes and chutney is one of my favourite meals, but sauce must be made from scratch using REAL vintage cheddar, (not the sad yellow stuff widely available in America) wholegrain mustard, a dash of vinegar and black pepper, and the cauliflower should be just tender. Mush is misery!
