When I was growing up, I would help my mom make her version of chicken fried steak. She would be the round steaks, which were a cheap cut of meat at that time. It was also the time of glass pop bottles and that's what we used to tenderize the steaks. Dip them in an egg wash batter, coat them in flour and fry them in the skillet with some grease. We though we were living the rich life! 😆 I recently made some fried chicken using unflavored protein powder as "flour" (no egg wash) and it turned out pretty good. I fried it in bacon grease and butter to crisp up the outside, then finished it in the oven. I'm going to give your "flour" mixture a try, too. Love the variety of options!
Yes it's because you would bread chicken then fry it for fried chicken but you are using steak. It is so wonderful and they also have chicken fried chicken which is also amazing.

i would just call it beef fried steak ❤
This style of preparing (flour dredged) and cooking (pan frying) and serving (drowned in a peppered white gravy) was originally done with pounded chicken breasts so it was chicken style. Eventually someone (a genius!) tried it with cube steak and that became known as chicken style (prepared and fried and served) steak or Chicken fried steak.
A tip I learned from French chefs: do not put all the butter to melt but keep at least half of it aside and add it to the sauce at the end of cooking after you turned off the heat. Your sauce will have a velvety texture

I watched my mom beat the tough beef steak with a wooden square mallet to tenderize it. I love gravy since I am a Southern woman. Thank you for introducing the meat flour this will be a game-changer in my recipes.

Great job Anita! Awesome way to do this dairy free! Chicken fried steak is called that because it's breaded and fried like fried chicken, and it's also called country fried steak. Looks awesome! That and my carnivore mashed potatoes would make me a happy boy. 😊
Anita, you could also use an egg yolk to thicken the sauce without using any dairy or other emulsifies. It works pretty good. I definitely have to try making this!!! I think my hubs would love this!

I think you need much more fat in the pan to cook those steaks
You forgot most of the fat in the pan to fry them in. It needs to be pretty deep. Pound first, and if you double dip them, it's better. Put them in the freezer for about 15-20 minutes. Then drop them into very hot oil. Flip carefully. Source: old "Restaurant Favorites" cookbook for Shoney's chicken fried steak.
