What kind of pork roast did you cut up for this recipe? Also have you ever tried the Ball electric pressure canner?
Hubs joked that I could build a Faraday cage from all my canning rings I keep hung like garlands around my pantry. I wish I had as many lids. Thankfully I purchased a LOT of Tattler and Harvest Guard lids and gaskets early last year as I noticed some of mine getting a bit old. That and the new HUGE commercial dehydrator Hubs got for me as a surprise has me sitting pretty for now.
Incidentally, I DO keep sterile canned filtered and distilled water on my shelves. These are good for wound irrigation and cleansing. Even with it available in stores, I find it nice to have it on hand when I need it, because when you need it you need it NOW!

That looks delicious. I have a Presto and the jiggler movement is inconsistent. Moves fast, then almost stops, then fast again. Any idea what the issue may be? I’m new to canning.

Thanks for your videos. I can myself and have followed you for years. Today I opened a canned broth that I put up, not sure what I canned. My wife moved it to storage area and I gad not marked it up. It turned out to be pho broth. held good vacuum. I have done various sauces and soups. I love meatloaf canned and ground burger for quick meals. Again thanks for the schooling. Oh ps yhe oldest meat loaf I opened was almost 4 years and was still good. I have one pozole that just hit 3 years. I found it pushed back on shelf. I will be openong iy tomorrow.
I never put lids on my extra jars in the canner. 😊.
I am going to watch the video for the enchilada sauce, it looks wonderful. I may use chicken though, my husband is not a big fan of pork.
