    this looks very tasty. just one comment, if the chicken is to be cooked in a pot i remove the skin this way the gravy penetrates the chicken better l would imagine that limpy skin isn't very appetizing. at any rate great job and good recipe.

    in mauritius we have a similar recipe but de call it "chicken salmi" same ingrรฉdients but we marinate it hours before we cook it in a low fire and we add red wine thats very delicious and hot as well

    Mole is as diverse as Latin American, thought it is an authentic Nation Mexican dish, I am American of Mexican decent, I make my mole differently then demonstrated here. Authentic Mexican mole must have chocolate as one of its main ingredients. I love, love mole, I always make it with lots of sauce so that I can make chicken enchiladas at another time. Mole is not thicken with flour, I fry corn tortillas and a bolillo, and puree that along with some of the chicken broth I then proceed to make the mole. Mole has a sweet intonation, I don't like overtly sweet mole, I like it well balanced, without the chocolate it is not mole, it is just plain red chili.

    chef querรฌa decirle que hice el mole aqui en Perรน con ajies peruanos, si quieren intentar esto en casa algun peruano, le recomiendo que si pueden subsituir. chile mulato: Aji Panca., en otra receta usan guajillo, se puede substituir tranquilamente con mirasol. para el poblano usen morrรณn verde (yo seco los morrones verdes al sol y sale un chile muy parecido tambien al mulato) y un rocoto asado para el picor. pare el resto de recetas todo se puede encontrar acรก en Lima. salio muy rico. tenemos un plato que se asemeja bastante al mole, se llama capulcra pero tiene menos ajies y se lo come con papa y es mas rojo
