    I love to pressure can deer and pork. We'll drain a qt and add bbq sauce for a quick lunch or dinner, especially if I'm having a bad day or we're in a hurry. I've even done pork salad (like tuna or chicken) with a can of pork roast, mayo, and pickle relish. It was a lot better than I expected. I agree with you on the ground meats. Much better dehydrated. I have dehydrated lean pork. It gets flossy, like your turkey. I prefer It canned, but dehydrated makes it much easier to toss in with the camping stuff.

    Maybe a slow brain day for me but is the meat/sliced sausage cooked prior to dehydrating? I listened twice and am coming away with they're raw.

    The ground beef I've dehydrated is cooked as are the tuna and chicken both previously canned.

    I love the fact that you give honest opinions as well as pros and cons. You are more of a test kitchen and I love it. I wanted to try cutting up some Deli meats to us in just casseroles and such. Not sure who that would rehydrate for use. Is this something you have tried? Thanks for all the great information you give out.

    I am a vegetarian but I cook chicken for my husband.. I tried canning chicken curry but for some reason he was not very happy with the smell so we are back to freezing.. Have not tried dehydrating them, maybe I should try with the one jar from the canned chicken we have left.. 🙂
    Back in India, when my grandma was alive, she use to sun dry salted fish.. The dehydrated salted fish then goes into curry during off season.. My mom use to tell me, her grandma use to sun dry salted goat meat.. For all this sun drying they had a specific handmade cot that was made using wild grass.. The way they stored the meat or fish back in India was in earthen clay pots.. Not sure how that worked as earthen pots are breathing.. With all the air should that not be going bad? But it actually worked for them, no idea how..

    I really think 50-100 years back, everyone was a prepper, I think that was the normal then..

    Question: Did you cook & dehydrate the sausages before sealing in a jar, or just dehydrate? Either way, can’t wait to do this! Can we dehydrate deli cooked sliced meat too?

    I bought some beef jerky at the store. I Vac/ sealed and put in mylar bag. Should I re- dehydrate It?? For Long term storage??
    Have you ever? I have a Presto canner and a Excalibur 9 shelf.

    One question that I have about vacuum sealing food, is about the rings. I always remove the rings on canned food. What about dehydrated food? I haven't really done much dehydrating, especially in enough quantity that this has been an issue. The fruits generally just get eaten up. But, now I am interested in trying out some alternative food storage methods. How long will dehydrated foods last? How do you know when they are completely dry?
