    Hi! Can I use green banana flour instead of arrowroot? I believe it has a high starch content.
    Also, can I just increase the amount of buckwheat flour instead of the sunflower seed flour? I don’t want to use any nut flours

    I have just found your channel after a friend said I ought to try Gf sourdough, as I've not had much success with other GF bread recipes. I found that when they are somewhat good, it's only for toasting and I would love a sandwich. Anyway, I have a couple of questions.
    1. I can't tolerate psyllium, so can I use xantham gum instead?
    2. You suggested using kefir, which I make regularly. If I use this for the starter, how much will I add to the flour, or could I use the whey from the kefir .Again, how much?

    Hi, working on my first sourdough starter using buckwheat. I followed the recipe in the printout, on Day 2 morning added 1/2 cup water and 1/2 cup buckwheat. A few hours later it had expanded so much it pushed through the coffee filter on top. I'm using a slightly smaller jar (710ml instead of 950ml). Figured I'll skip adding any more buckwheat/water. Any suggestions?

    Thank you for this recipe! I made this for the first time today. I'm eating it right now! It it so good! The only thing I did differently was use a buckwheat starter. It didn't rise very well though. Could it have to do with the buckwheat starter? I really like this recipe for it's taste and simplicity. Combining all the allergies in my family, we can't have dairy, gluten, sugar, or eggs. So I feel like I hit the jackpot finding this video!
