    Looks wow!
Can we pan sear on high quickly to get a nice crust. Then apply the glaze and finish off in the oven?

Also would seasoning the fillets before searing throw off the recipe?

Have fished the west coast for Salmon for over 50 years from Half Moon Bay, all the way up to Newport Oregon, still love to eat it. Even had a few close encounters with Sharky's kinfolk…I saw Sharky just right of your cutting board when you were getting to plate up. One quick stove top recipes I usually go to is cast iron skillet med. heat two pats of butter and liberal sprinkle of Tarragon. Start presentation side down time depending on thickness and then turn till you get to 145 degrees I usually serve with steamed asparagus spears and any starch of choice.

Salmon is among my top choice seafood dishes, but brown sugar glaze with Dijon mustard and lemon? I am so there! My budget isn't always pliable enough for the big pieces like you have, and I'm cooking for numero uno, so I get the individually wrapped portions in the frozen section. 😅 Oh, and Shark Dude was looking for a bite at the time you plated things up. (Hungry shark, doo doo doo doo doo, hungry shark…)

PS: I found your banana muffin with chocolate chips recipe a couple weeks ago, and OMG, those were sooo good! They froze up easily after wrapping them in plastic wrap, and since I added walnuts, they make a perfect breakfast or snack that's actually quite filling. Stick em in the microwave for 30 seconds and bada-bing, bada-boom! Breakfast on the go! 🚗🚗🚗 Those muffins were my introduction to your blog/website, so seeing your videos pop up in my YT recommendations had me cheering. 😁
