    A few comments. Thanks Gaynor for talking about your Ninja. I got rid of my deep fryer years ago but I have an air fryer. I will try that. The double dip in the egg and flour is what I think I have been missing. I will try that next time. I pound my chicken as opposed to slicing it and, given the response when I cook for people, that is rare where I live. Pounding takes a hair longer but gives a more consistently even thickness of the chicken breast.

    I like what Joshua Weissman does with his fried chicken is for his egg wash mixture, he splatters a bit in the flour mixture so that it gets clumped a bit and you get those "craggy" bits on the breading of the chicken after frying.

    I may have to try this recipe myself–even though I can walk to Chick-fil-A lol! I'm sort of the same way with tomatoes, Aiden. One thing I've always done if I pull them off is put salt on the tomatoes while I eat them. You might be different, but it makes them better

    First thing I want to say. It's Guda,not Gouda, and no, you don't take a mallet to the chicken, some recipes call for it, not when making chicken sandwiches. I know, I've made them. You want them thick and juicy. They'll cook just fine, chicken isn't one of those meats that needs to be broken down.
