    Oh wow! Snausage, cheese (sauce) mustard, pretzel roll, onions & peppers, that's just a mouthful! It's a must-try for sure!
    So, would smoking brisket trimmings over a baking sheet or cake pan render smoked tallow? Gotta do something with the trimmed fat cuz I hate to waste it and I don't grind burger, yet!

    Neal, you have a smoker, you smoke briskets, you can make your own tallow. Just save all the fat you trim off your brisket and put them in a cast iron skillet and put them on your griddle or even your gas grill, I use a n induction burner to make mine. Render it all down and pour it into a mason jar. Use a coffe filter over the jar to filter the tallow as it goes into the jar. I keep it in my outdoor fridge and use for cooking all the time.

    I love the idea of the beer cheese sauce. Going to have to use that one. In a related note, I made some of your smash burgers with onions in them the other day, and use the leftover smoked queso dip as the cheese. Oh baby. You can eat that stuff on a flip-flop.

    Looks amazing Neil and Amy! I would have never thought to use the meat from a brat to make a burger patty. That cheese sauce looks amazing, and I can smell a future appetizer of some soft pretzel bites, that amazing beer cheese, candied bacon and crispy jalapenos! As always, great content and always thinking outside the box.

    I was hoping you'd give a call out to the mustard, the name makes it sound interesting. I like to slip some dijon into mushroom gravy for an added "what's that?" flavor note, and thought the beer mustard might work also.
