I made dried cranberry and hazelnut biscotti a few years ago for Christmas gifts. They were great. I just make one thing now for gifts. Triple Gingerbread.
Yum. I have apricot-pistachio in my cookie jar right now! I like using whole almonds (w the skins), toasted lightly, cooled, then cut into halves and thirds. More chunks in the biscotti!! Also have cake/cooling racks that fit my sheet pans, and plop the cut cookies on those — air circulation so I don't have to flip them.
I may have to switch to grams. I like how things are multiples of 250 here. Thanks!

We have three pre-Whirlpool KA stand mixers which need servicing roughly every 500 hours and no Whirlpool made KA, the two we had blew up in less than two years.
I'll never buy another post-Hobart KA stand mixer.

I used to make biscotti for my late mother. She liked dunking them in her coffee.
My family's Biscotti has almonds, fennel seed, almond extract, anise extract, and a shot of whiskey in ours.
My wife likes them bone dry with a firmness Bob Seger would appreciate (like a rock). I’ll have to give these a try as my first attempt and adjust from there. Haven’t found a store bought one she likes.

Orange and almond is a nice combination of flavors. However, When I make biscotti, I like mine more colored and crunchy.
Would be good made with finely chopped black walnuts and a dash of cardamom!

Glen, you are hilarious. You go through all the trouble to scrape out that mixing bowl with the scraper thingy, and then leave a couple huge chunks of dough behind in the bowl.

Growing up in Philly the only Biscotti you could have is anise, made at local Italian bakeries, which I love, but orange & almond go so well too.
