    For a stew, you'll want to use beef chuck. Chuck is an affordable option and has high levels of connective tissue. As the connective tissue cooks, it releases higher levels of gelatin than other cuts of meat, which makes it more moist. Beef chuck is also a tougher cut of meat, which lends itself better to the pressure of cooking in the instant pot or crockpot.

    If you make this in the instant pot, you’ll need roughly 2 hours to make it. The crock pot takes roughly 8 hours.
