Why didn’t they use any flour to thicken it?
No onion? NO salt in the beginning at least? I thought the bread would thicken it. I make my stew have a thickened gravy.

John, I am the daughter of a postal supervisor. Growing up we never thought of stew as being anything but a staple meal. No bread, and my mom always put in celery (which I am not a fan of to this day)- I have eaten a lot of stew 🙂 I love how you capture the spices (cloves and such. I now use an onion for cloves! – You are just the best, and you make me happy! ~ Cyn

it would be more benefitial if you didnt evaluate YOUR cooking skills (everything is on point, done perfectly) but critique the recipe´s flavour. i didnt really see what made this stew 18th century, it just looked like a normal stew to me. was anything special about the spices and herbs? was there specific mention of an unusual cooking time?
