    Oxtail and short ribs for stock! I usually use those for my main dish! For stock, I use bones with marrow, and knuckle bones. Boil them for 15 minutes to remove impurities, then rinse. Place them into a stock pot with mirepoix. Add a little acid like apple cider vinegar to help release those nutrients from the bones. Add water, bring to a boil, then lower heat to a simmer. The simmering process could be for hours up to a couple of days! ☮️🖖🏽
