Baby backs can be difficult, fat content varies greatly from rack to rack so theyβre easy to dry out. Much more prefer St Louis or even spare ribs. After I wrap the ribs I cook them in the oven and shut down the smoker. And I agree, remove the silver skin.

Love, love, love doing ribs on the smoker! πI typically dry rub, then spritz occasionally until it's time for sauce, but I'll definitely have to try your method.
Oh, and "cookout season", lol. Even though I'm in the cold, wet PNW, it's cookout season year round for me. I've been known to shovel a path on my deck through 2'-3' of snow to access my grill & smoker. Literally nothing stops me from cooking outside. π€£
They both looked good but you can tell the ones that went on the smoker/grill was better just how it looked and your reaction when you tried it. But as always say it with me yall "Looking Good "
