My go-to for potlucks from my Airstream with no oven is potatoes au gratin in the Instant Pot. I do it pot-in-pot (using one of those two container things – easy to carry to the potluck) layering in potatoes, cheese and garlic and then putting a cup of heavy cream into each container. I cook on high pressure for 45 minutes with two cups of water in the bottom of the Instant Pot. I loooove potatoes au gratin and before the Airstream my boyfriend and I had a rule that we would only cook it on vacations! Now just potlucks!
I would have a couple of biscuits with that to sob up all that cheese that look delicious.
