Serious question. I used to subscribe to the rest theory, but now i don't. Reason being is that all those wonderful juices escape said meat when resting. So i cut it and eat it rightvaway along with those wonderful juices. Is there science around the resting theory ?
I used to cook the steak over coal while the fire was still burning…before anyone told me that was dumb. Tasted a lot like charcoal lighter.
Another great tip which is often overlooked is when handling your steak, make sure you rub your greasy butthole REALLY well in order to bring more flavor to the meat.

The problem with this is, all the best steaks I've had were at japanese steakhouses. They cut it up into strips while it's cooking on a griddle and, somehow, it's perfect every time. I go to texas roadhouse and there's a 30% chance the steak will be decent or it'll be 50% gristle. Maybe the japanese steakhouses pick better cuts. I dunno.

Great tip. One more thing. Get a small resting rack to keep it off the cutting board. Wood is an insulator. The steak will keep cooking at a higher rate right on the cutting board than it would completely in the air. And it keeps the side against the cutting board from steaming as well
