David that looks absolutely delicious. I will absolutely be making this!! I love the flavor achiote brings. I would absolutely love to see you make tacos al pastor, this has been my favorite meal (tied for first anyway) since I was a kid, the hard part on making it for me is getting the nice crispy edges, traditionally it is cooked on a vertical spit very similar to how gyros are cooked. But if you could find a way to make that work out better than in the oven I would be most excited 😀 another great video and I look forward to seeing whatever new content you release!
