Very good video. I especially like how you pay special attention to the details. It especially helps seeing exactly how much the collards shrink down. I will make my fresh green beans the exact same way. Between collards and green beans, both with ham or bacon or ham hocks or smoked turkey, I could live on just this for the rest of my life! It may bee too hot for some But I love to add one habenero pepper (Do not cut the pepper) to the pot. In Jamaica we all it scotch bonnet pepper.

I like the way you cooked the greens in the Instant Pot and will try that with my greens the next time I get ready to cook some.
Save the stems and other discarded greens to make vegetable stock. You can freeze them.
Made this and found it a bit salty for my taste. I don't know if it's the salt water for soaking (rinsed it twice after soaking) or the country ham pieces I used. I'll have to find a way of cutting down the salt next time.

Thank you so much for this wonderful recipe! I used a smoked turkey leg instead of the hock, red pepper flakes because I didn't have a jalapeno, and I only had a pound of "ready to cook" greens. Oh my! It truly was the best bowl of greens that I have ever had!
I wish I had found your video. I have been making collards like this on the stove for years, but it took me forever to figure out how to adapt it to the Instant Pot!! You would have saved me a lot headaches and a lot of burn messages!!

Need to lower the back ground noise dont know what to listen to you or the TV just set mine for 35 mins.and came out perfect
I just washed didnt use salt they came out not bitter I just left mine on saute to wilt it down
I chopped the stems also they was so tender to eat,the IP cooked them down and I added a serrano chili plus pepper flakes and 2 tomatoes bacon plus smokey Turkey wings and leg also added paprika
