    While familiar with Sapporo miso-ramen and traditional cha siu, I had never seen the second or fourth styles. I'm especially interested in trying the last as I have some napa to use up and was thinking of making a version using bacon, as I don't have any uncured pork belly currently.

    The Japanese dedication to noodle making just plain shames the Italians. Italy has many shapes and forms, but Japan actually creates an incredible number of different noodles. Bravo!! When I feel ambitious, I make dashi with kelp and bonito flakes. It is so very good! Great recipes. Thanks for another "directional video."
