    Let's be honest fresh pasta is just a fluke It is impossible to get an al dente bite, because simply there's still moisture within the dough, restaurants use it as a way to charge a little bit more, the only exception would be stuffed pasta dishes i.e raviolo's, Conchiglie, and lasagne.
